Apple Tart
This recipe comes from my husband Patrick's side of the family, He insisted I should tried this one instead of the typical Apple Pie with two crusts; one day I did it and it was so light and delicious and sticky and gooey from all the caramel that, I haven't really bake a traditional pie again! So trust me on this one!
Ingredients
- Crust
- 2 cups all-purpose flour
- 1 tablespoon dark brown sugar
- 1 teaspoon kosher
- 1 cup cold unsalted butter chilled and cut into small pieces
- ¼ cup cold water
- Cooking spray
- 1 egg yolk plus 1 teaspoon water beaten, for egg wash
- Filling
- 4 large or 6 medium Fuji or Granny Smith apples or any crisp sweet apple you preferred enough to make 6 cups sliced apples
- ½ cup dark brown sugar firmly packed
- 1 teaspoon ground cinnamon
- 8 tablespoons butter
- Vanilla sugar for sprinkling, optional
Instructions
- Preheat oven to 400 degrees F.
- Combine all the dry ingredients in a large mixing bowl. Add butter. Add the cold water. Mix in with the fingertips, not hands, as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Press down to form a disk. This will make rolling out easier after chilling. Lightly spray a deep 9-inch pie pan with cooking spray. Lightly brush sides and bottom of crust with egg wash. Cook in the oven for 10 minutes before filling.
- Preheat oven to 350 degrees F.
- Filling Preparation
- Peel, quarter, and core apples; cut into ¼-inch slices. In a separate bowl combine sugar and cinnamon, place the apples slices carefully completing two times the pie circle; cut butter into very small pieces and sprinkle among with the sugar mixture over the apples. Lightly brush egg wash around edge of pie. Bake at 350 degrees F for 45 minutes, or until top is golden brown and the mixture of the sugar and butter have become a caramel. Remove from oven and sprinkle with vanilla sugar, if desired. Cool on wire rack.

Today's tart is a family recipe with only a bottom crust, and lots of apples and butter, the mixture of butter and sugar will turn into a caramel and will confit the apples, so at the end you will have lika a preserves texture like apples paired with the crispiness of the bottom crust is just heaven on a plate.

Tarta de manzanas
Esta receta viene del lado de la familia de Patrick, insistió en que debía probar esta tarta en vez del pastel de manzana tradicional con dos masas; un día lo hice y era tan ligero y delicioso y pegajoso por todo el caramelo que tenía, que realmente no he vuelto a hornear un pastel tradicional de nuevo! Así que confíen en mí para esta receta!

- 2 tazas de harina para todo uso
- 1 cucharada de azúcar morena oscura
- 1 cucharadita de sal
- 1 taza de mantequilla sin sal fría cortado en trozos pequeños
- ¼ taza de agua fría
- Spray para cocinar
- 1 yema de huevo y 1 cucharadita de agua batidos, para pintar la masa
- 1 cucharada grande de azúcar con aroma de vainilla
- Relleno
- 4 grandes o 6 manzanas medianas Fuji o Granny Smith o cualquier dulce de manzana crujiente que sean suficiente para hacer aproximadamente 6 tazas de rodajas
- ½ taza de azúcar morena bien compacta
- 1 cucharadita de canela molida
- 8 cucharadas de mantequilla
Instructions
- Precaliente el horno a 400 grados F.
- Combine todos los ingredientes secos en un tazón grande. Añadir la mantequilla. Agregue el agua fría. Mezclar con las yemas de los dedos, no las manos, ya que las palmas calentarán la masa. Continuar mezclando agua hasta que la masa comienza a formar una bola, sin estar pegajosa, pero sin que se desmorone. Presione hacia abajo para formar un disco. Esto hará que el despliegue de más fácil tras la refrigeración. Rocíe ligeramente un molde para pastel de 9 pulgadas con aceite en aerosol. Pinte con el huevo batido ligeramente los lados y el fondo de la masa. Cocine en el horno durante 10 minutos antes de llenar.

Pinte con el huevo batido alrededor del borde del pastel. Hornee a 350 grados F durante 45 minutos, o hasta que la superficie esté dorada y la mezcla del azúcar y la mantequilla se haya convertido en un caramelo. Retire del horno y espolvoree con el azúcar con aroma a vainilla, si se desea. Dejar enfriar sobre una rejilla. Disfrute
Una tarta de manzana es un pastel de frutas (o tarta) en la que el ingrediente principal es el relleno de manzana. I like the fact that this pie has only one crust because I remove most of the top crust on an apple pie anyways. Also, I'll take caramelized sugar in lieu of a top crust any day of the week!
