Leek, mushrooms and tomatoes quiche
So I was preparing a meeting in my house for the High School reunion committee, I can't believe it's been 25 years already since our high school graduation! my God, time flies when you are having fun, does it not?
Well Thinking over what to serve, that was yummy but easy to eat, I decided to make a quiche and look through my vegetables drawer in the fridge and found leeks, mushrooms and cherry tomatoes, so I chose those and begin putting together my quiche.
Yes, I know I have a thing for quiches and soup, but hey can you blame me?? they are so good and easy to make I just can't help myself.
So I always have one of my pastry recipe's in the freezer, I took it out and so it will began thawing, you can find my recipe for the pastry dough here.
Ingredients
- 1 Pastry dough recipe
- 1 small package of cherry tomatoes
- 1 small package of mushrooms cut into slices
- 6 leeks cut into small slices
- 2 tablespoons of olive oil
- 1 cup of cream
- 2 eggs
- salt and pepper
- ½ cup of grated parmesan
- some parsley
Instructions
- In a frying pan put 1 tablespoon of olive oil, put the leeks, let them sauteed until transparent, then cook the mushroom, to take the moisture off them.
- Roll out and line a deep 9" tart tin, with a fork mark the bottom so it won't bubble up.
- In a bowl mix the eggs, cream, salt and pepper and reserve.
- Pre heat the oven at 400 F or 200 C
- In the bottom of the quiche spread the leeks, add the mushrooms and place the cherry tomatoes, pour the eggs and cream mixture over the vegetables. Sprinkle wit the Parmesan cheese!
- Put the quiche in the oven and cook 40 minutes, serve right away!
