Scaloppini alla milanese with spaghetti
Hey! how was your week end? Hope was fine and better than mine, I don't know if this happens to you also. But when you have kids the rhythm of your day to day routine is dictated on their schedule, in my case on their health. And this past week end my youngest caught the flu so we mostly stayed home. 🙁 Thankfully yesterday was a holiday here so we didn't had school or work and we spend the whole day in bed. She is doing much better today, she went to school and hasn't have a fever since this morning.
So I made her this veal scaloppini that she loves. It is so easy to make and you can have a grown up version adding your favorite garnishes, as I did. Veal alla milanese is a simple and great family dinner - Scaloppine (plural and diminutive of scaloppa - a thinly sliced cut of meat) (in English usage scaloppini; sometimes scallopini) is an Italian dish consisting of thinly sliced meat (most often veal, although chicken and pork may also be used).
Ingredients
- 3 eggs
- 2 tablespoons finely grated Parmesan cheese
- 1 teaspoon thyme
- ½ cup all-purpose flour
- 1 to 2 cups plain dry bread crumbs
- 1 teaspoon dried thyme
- 1.5 pound thinly sliced veal scaloppini
- salt and freshly ground black pepper
- Vegetable oil
- Lemon wedges
- To serve
- 1 packet of spaghetti
- Lemon wedges
- Grated Parmesan
- capers
- olive oil
Instructions
- Place each piece of veal in between two pieces of plastic film (saran wrap) or waxed paper and lightly hit it with a rolling pin until flattened.
- I a large pot, fill almost to the top and put to boil over medium high. When the water begins to boil, add salt and then the pasta. Cook according to package.
- Season the veal with salt and pepper. Place the flour on a plate and season well. Tip the eggs, thyme and Parmesan into a shallow bowl and season. Finally, place the breadcrumbs on a plate. Dip it first in the flour, shaking off excess. Next, place the floured veal into the beaten eggs, coating completely. Place the veal into the bread crumb mixture and gently press crumbs into the veal. Set aside on large plate and continue with remaining veal slices.
- Place a large frying pan over a medium-high heat and add a generous amount of oil. When nice and hot, add 2 pieces of veal each time and fry for 3-4 minutes on each side until golden. Transfer to a plate covered with paper towels to drain any excess oil.
- Drain the pasta and add 2 tablespoons of olive oil, mix and reserve.
- Sprinkle each escalope with a little salt and serve with a good spoonful of pasta, a sprinkle of Parmesan and garnish with capers and anchovies (optional).
- Serve with lemon wedges.

Escalopines de ternera a la milanesa
¡Hola! ¿cómo estuvo tu fin de semana? Espero que bien y mejor que el mío, no sé si esto le sucede a usted también. Pero cuando tienes niños el ritmo de la rutina diaria se dicta por su horario, en mi caso por su salud. Y la semana pasada mi hija menor, le dió la gripe, por lo que pasamos la mayoría del tiempo en la casa. 🙁 Afortunadamente ayer era un día de fiesta aquí, así que no tuvimos ni escuela ni trabajo y pasamos todo el día en la cama. Ella está mucho mejor hoy, fue a la escuela y no le ha dado fiebre desde esta mañana.
Así que le hice escalopines de ternera que le encantan. Es tan fácil de hacer y se puede tener una versión de adultos añadiendo tus aderezos favoritos, como yo lo hice. Ternera a la milanesa es una simple cena familiar - Scaloppine (plural y diminutivo de scaloppa - un corte en rodajas finas de carne) (en scaloppini uso de Inglés, a veces scallopini) es un plato italiano que consiste en la carne en rodajas finas (con mayor frecuencia ternera, aunque pollo y cerdo también se pueden utilizar). Empanizadas con pan rallado, se utilizan frecuentemente hierbas como el perejil, albahaca, tomillo.
Ingredients
- 3 huevos
- 2 cucharadas de queso parmesano rallado
- 1 cucharadita de tomillo
- ½ taza de harina
- 1 a 2 tazas de pan rallado
- 1,5 libras de escalopines de ternera cortada en rodajas finas
- sal y pimienta
- Aceite vegetal
- Rodajas de limón
- Servir con:
- 1 paquete de espaguetis
- Rodajas de limón
- Parmesano rallado
- alcaparras
- aceite de oliva
- anchoas opcional
Instructions
- Coloca cada pieza de ternera entre dos trozos de papel plástico (papel film) o papel encerado y golpea ligeramente con un rodillo hasta aplanarlo.
- En una olla grande, llena de agua casi hasta el tope y poner a hervir a fuego medio alto. Cuando el agua empiece a hervir, añadir sal y luego la pasta. Cocine de acuerdo con las instrucciones del paquete.
- Sazone la carne de ternera con sal y pimienta. Colocar la harina en un plato y sazone bien. Ponga los huevos, el tomillo y queso parmesano en un recipiente poco profundo y sazone. Por último, colocar el pan rallado en un plato. Sumerja cada pieza de ternera primero en la harina, sacudiendo el exceso. Luego, coloque la ternera en los huevos batidos, cubriendo por completo. Coloque la carne de ternera en la mezcla de pan rallado y presione suavemente. Ponga a un lado el plato grande y continuar con el resto de las rebanadas de ternera.
- Colocar una sartén grande a fuego medio-alto y agregue una cantidad generosa de aceite. Cuando esté caliente, agregue 2 piezas de ternera cada vez y freír durante 3-4 minutos de cada lado hasta que estén doradas. Colocar a un plato cubierto con toallas de papel para drenar el exceso de aceite.
- Escurrir la pasta y agregar dos cucharadas de aceite de oliva y revuelva, reservar.
- Espolvorear cada escalope con un poco de sal y servir con una buena cucharada de pasta, una pizca de parmesano y decorar con alcaparras y anchoas (opcional).
- Servir con rodajas de limón.
